Rainbow GF Funky Fruit Tarts

I love sweets.

I could eat them everyday, and sometimes that is A OK!

Especially these rainbow packed energy tarts!

Mindfulness Cookie Monster

Ingredients: 

3 Parts Bob Mills Oatmeal

1 Part Bob Mills Teff Flour

1 Part Arrowhead Mills Rice Flour

1/2 Box of Pumpkin Puree

4-5 Bananas and/or Plantains

2 Pears

2 Apples

Frozen Strawberries

Two healthy handfuls of unsweetened coconut flakes

1 or so cups of Coconut Milk Unsweetened

Cacao Chocolate

(ASH locals- Hopey is great for GF flours & the Belgian Dark Chocolate Cacao Bar & coconut, & fruit are from Traders in bulk :))

Directions: 

Preheat oven to 350, depending on strength of oven.

In a large glass bowl mix, Oatmeal/Teff flour/Rice flour.

Add Bananas/Plantains & pumpkin.

Add Coconut Milk.

Mix with a fork until there is no dry flour.

Chop up apples and pears into little tiny pieces.

Add apples, pears, coconut flakes.

Chop up cacao into a hearty dust.

Coat pan with coconut oil.

Spoon batter into baking dish (I used my cask iron pan) about smaller than your fist, add cacao dust.

Final touch, a strawberry on top of each cookie!

Bake for 10 min or so, the perimeter of the cookie/tart will turn a little brown.

They are great to be enjoyed warm & are a blessing of goodness.

The greatness of this recipe is that you could make a cake, or not use apples, or add mangos. The core of it is Oatmeal and GF flour which make it a perfect desert for everyone! It’s also packed with fiber (pumpkin/fruit).
